Confused About Subdomains?

Very new to website building.
I bought a few domains with 1and1.co.uk. They allow you to create 5 subdomains on your account and I’ve done this in the past. e.g whatever.com has forum.whatever.com and blog.whatever.com all made throught the 1and1 control panel and pointing to different hosts.
But now I’ve purchased hosting with godaddy and they have options in their settings to add subdomains.
So what’s the deal with being able to create subdomains both with the place you bought the domain and at the hosting your pointing it to???
What am I missing – surely they can’t both be in charge of assigning subdomains at the same time?

    DNS works from the right to the left, starting at the implied dot after dot com, and goes out to the root hint servers.
    the root hint tells DNS where com is
    com tells DNS where whatever.com is
    and whatever.com tells DNS where forum.whatever.com or blog.whatever.com is.
    Whoever is the authoratative name server for whatever.com, needs to hold any host (or A) records for forum and blog.
    Basically if the hosting place is allowing you to create subdomains, they either contact the registrar, or become the registrar of whatever.com. Depending on your arrangements.
