Which is better to do:
1) Delete account (domain and server access) with GoDaddy and then re-open same domain name with new server?
2) or finish out year paid for domain with GoDaddy and then take my domain elsewhere? Is that even possible or does GoDaddy own it?

Just signup with a different registrar and transfer your domains from GoDaddy.
You’d have to select Domain Transfer option from your domain manager; have GoDaddy give you the NIC authrorization code which you will need to supply the company your moving to; if the domain is over 60 days old it will happen instantly; if it doesn’t, by domain registrar law you will have to wait until it has been registered for 60 days.
I just did it two weeks ago.
